Roasted Summer Veggies
The perfect summer side dish that is healthy and filling. I like to serve this recipe with a protein such as stead, chicken, or fish.

Ingredients
- 1 Zucchini
- 1 Yellow Squash
- 5-10 Whole Carrots
- olive oil
- Everything But The Bagel Seasoning [Found at Trader Joe's (AKA EBB)]
Instructions
- Preheat oven to 425 degrees
- Cut veggies into quarters. I like to shave the "skin" of my carrots first then cut them.

- Put just the carrots in first for the first 10 minutes
- After 10 Minutes Add the Zucchini and Yellow Squash to the pan - Continue cooking for 15 minutes OR until veggies are cooked. (I like mine with a little crisp so I cook them longer)
- Enjoy! I usually make this as a side dish with a protein.
