Roasted Summer Veggies

The perfect summer side dish that is healthy and filling. I like to serve this recipe with a protein such as stead, chicken, or fish.

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 1 Zucchini
  • 1 Yellow Squash
  • 5-10 Whole Carrots
  • olive oil
  • Everything But The Bagel Seasoning [Found at Trader Joe's (AKA EBB)]

Instructions

    1. Preheat oven to 425 degrees
    2. Cut veggies into quarters. I like to shave the "skin" of my carrots first then cut them.

    4. Put just the carrots in first for the first 10 minutes
    5. After 10 Minutes Add the Zucchini and Yellow Squash to the pan - Continue cooking for 15 minutes OR until veggies are cooked. (I like mine with a little crisp so I cook them longer)
    6. Enjoy! I usually make this as a side dish with a protein.
