Chicken Noodle Soup

This is my favorite soup to have when the weather starts to get a little chilly or we want to host some friends. It also is good for your gut. Feel free to add or subtract as much meat or veggies as you would like.

My biggest tips:

  • Cook the noodles separate and add when you serve into each bowl. This prevents the noodles from getting soggy and soaking up the broth. This is also great for people with food allergies so that you can keep separate. I prefer bowtie or wide noodles.
  • Chicken thighs have way more flavor in soup vs chicken breasts.
  • The Chicken Bone Broth from Trader Joes has SO MUCH more flavor than regular chicken broth. You can find this in the refridgerated section where they keep the bacon and chicken sausage.
  • Squeezing lemon at the end is also a must.

Total Time 40 minutes

Ingredients

  • 1 large bag of whole Carrots
  • 1 bunch of Celary
  • 2 lbs Chicken Thighs
  • 6-8 cups Chicken Bone Broth (found at Trader Joes) oe Chicken Broth/Stock (depending on how broth you want the soup - I prefer broth so I use 8 cups.
  • 2 medium yellow Onions (Onion Powder)
  • 6 Garlic cloves ( or use Garlic Powder)
  • Salt (Add to your liking)
  • 1/2 -1 Box/Bag your favorite pasta noodles (depending on how many people you are serving)
  • 2 Tbsp Avocado Oil
  • 1 lemon
  • Parsley
  • Thyme
  • Salt and Pepper to taste

Instructions

  1. Chop all veggies and chicken thighs to bite size. (Can sub $5 rotissarie chicken from target or costco for chicken thighs and shred chicken)
  2. Cook chicken thigh bites until done, then set to the side
  3. Add two tablespoons of oil of your choice to a pot and sautee the chopped onions and garlic.(about 3 minutes)
  4. Add the rest of vegetables and cook until they're soft (5-10 minutes)
  5. Add in seasonings. (I eyeball this and add more as I go)
  6. Add Bone Broth or Chicken Broth (or chicken bone broth) and add more as needed or to your liking.
  7. Add cooked chicken thighs and bring to a boil. Then bring back down to a simmer and cover for 10 minutes. Add more spices as needed
  8. While soup is simmering cook pasta according to the packaging in a separate large pot.
  9. After soup is done, mix in noodles with individual bowls of soup.
  10. Serve with bread, enjoy!
