Jalapeno Corn Chowder

A crowd favorite! You can cook this on both the stove and in the crockpot. This is one of those soups that I don't think anyone can't like.

Cook Time 6 hours 4 seconds
Total Time 6 hours 15 minutes 4 seconds

Ingredients

  • 2 cups cooked ham , diced into small cubes (I buy already cooked diced ham)
  • 1 medium yellow onion , chopped
  • 2-3 carrots , peeled and diced ( I also like to buy the shredded carrots to save time)
  • 2 celery stalks , diced
  • 2-4 Jalapenos (diced or sliced)
  • 6-8 cups of chicken broth (if you want a thicker soup, use less broth)
  • 5-7 medium golden potatoes , diced into cubes
  • 1 tbs or to taste Everything but the Leftovers seasoning (found at Trader Joe's)
  • EVERYTHING BUT THE LEFTOVERS SEASONING ALTERNATIVE: 3/4 tsp dried oregano, 1/2 tsp dried thyme, Garlic Powder
  • Salt and freshly ground black pepper , to taste
  • 2 cups fresh corn (or frozen or canned)
  • 1 cup of heavy cream (Alternatives: sour cream, coconut milk, skim milk)
  • Chopped green onions or chives, for serving

Instructions

CROCKPOT INSTRUCTIONS:

  1. Add everything to a crockpot EXCEPT for the cream. Cook on high for 4-5 hours or low for 8 hours.
  2. NOTE: If you add only 2 jalapenos it will not be spicy, but will give the soup a jalapeno taste. If you want more spice add 3 or 4.
  3. The last hour add in the heavy cream. Cook for another hour.
  4. Top with chopped green onions


STOVETOP INSTRUCTIONS:

  1. Heat 1 tbs of oil or butter on stove.
  2. Sautee onions, carrots, and celery until tender.
  3. Add in rest of ingredients (except for the cream) and bring to a boil.
  4. NOTE: If you add only 2 jalapenos it will not be spicy, but will give the soup a jalapeno taste. If you want more spice add 3 or 4.
  5. Cover and simmer for 15-20 minutes.
  6. Top with chopped green onions

Serve with cornbread, fritos, or bread. ENJOY!
